Steak Bites:

  • 2 NY Strips (cut into bite-sized cubes)
  • 1 tbsp Kosher Salt
  • 1 tbsp Black Pepper
  • 1 tbsp Garlic Powder
  • Neutral Oil (as needed)

Mashed Potatoes:

  • 56 Golden Potatoes (peeled)
  • 1/2 cup Whole Milk
  • 1/2 cup Sharp Cheddar Cheese
  • 4 tbsp Unsalted Butter
  • 1/2 cup Beef Broth
  • 1.5 tbsp Steak Sauce
  • 1.5 tbsp Champagne Vinegar
  • 1/2 tbsp Dijon Mustard
  • 1 tsp Worcestershire Sauce
  • 1 tsp Black Pepper
  • Kosher Salt (to taste)

Instructions

  1. Mashed Potatoes – Heat up a pot with water and 1.5 tsp of salt to boiling. Peel your potatoes, cube into quarters, and add to the boiling water. Cook until fork-tender (about 25-30 minutes). When tender, strain out the water and mash the potatoes. Add the butter and milk in batches while stirring. Finally, add the cheese and mix together thoroughly. Keep warm until ready to serve.
  2. Steak Bites & Pan Sauce – Cut your steaks into bite-size cubes. Slather with oil and season thoroughly with salt, pepper, and garlic powder. Preheat a cast iron skillet over high heat with tallow to melt. Add the steak bites to the skillet; cook for 3-3.5 minutes per side or until reaching 120 degrees F internally. When done, let cool for 10 minutes. Deglaze the skillet with beef broth, scraping to get all the flavor. Add the remaining pan sauce ingredients and simmer until thickened (about 10 minutes). Serve the steak with mashed potatoes, top with pan sauce, and garnish with parsley.

Notes

  • For a richer flavor, consider using bone broth instead of beef broth.
  • Adjust the seasoning of the steak bites according to your taste preferences.
