Tofu Coating
- 4 tablespoons soy sauce
- 4 tablespoons cornstarch
- 16 ounces super firm tofu, cubed and pressed
Cooking
- 2 tablespoons high heat oil (such as vegetable or canola oil)
Sauce
- ¼ cup soy sauce
- 2 tablespoons cornstarch
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- ½ lime, juice only
- 2 tablespoons sesame oil
- 2 garlic cloves, minced
- 2 tablespoons minced ginger
- 2 tablespoons sesame seeds, plus more for garnish
- ¼ cup sliced green onion (optional)
- Coat the Tofu: In a large bowl, combine 4 tablespoons soy sauce with 4 tablespoons cornstarch and whisk together. Add the cubed and pressed tofu and toss gently until all pieces are fully coated. Set aside to let the coating adhere while preparing the sauce.
- Prepare the Sauce: In a separate bowl or jar, mix together ¼ cup soy sauce, 2 tablespoons cornstarch, brown sugar, rice vinegar, fresh lime juice, sesame oil, minced garlic, and minced ginger until well combined. Set aside.
- Cook the Tofu: Heat 2 tablespoons of high heat oil in a large pan over high heat. Once the oil is hot but not smoking, carefully add the coated tofu cubes in a single layer. Fry them until most or all sides turn golden brown and crispy, turning carefully to prevent breaking.
- Add the Sauce and Simmer: Reduce heat to low to a gentle simmer and pour the prepared sauce over the tofu in the pan. Cover the pan with a lid and let it cook for 2 to 5 minutes, stirring occasionally as the sauce thickens and sticks to the tofu, creating a glossy sticky coating.
- Serve and Garnish: Serve the sticky sesame tofu hot or at room temperature. Garnish generously with extra sesame seeds and sliced green onions for added crunch and flavor.
Notes
- Pressing the tofu thoroughly before cooking is essential to achieving crispiness.
- You may adjust the sweetness or acidity of the sauce by adding more brown sugar or lime juice to taste.
- This dish pairs well with steamed rice or sautéed vegetables.
- Leftovers can be reheated gently in a pan or microwave, but sauce may thicken further.
- Use a neutral high heat oil like vegetable or canola oil to avoid smoking at high temperatures.
