Dry Ingredients
- 2 1/2 cups all purpose flour (300 grams)
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients
- 4 tablespoons unsalted butter (melted and cooled, 56.5 grams)
- 3/4 cup sugar (148.5 grams)
- 3/4 cup yogurt (170.25 grams)
- 2 eggs (beaten)
- 3 very ripe bananas (mashed well)
- 2 teaspoon vanilla extract
Fruit
- 1 cup fresh diced strawberries (136.1 grams)
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and spray a 9 by 5 inch bread pan with cooking spray to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all purpose flour, baking soda, and salt to evenly distribute the leavening agent and seasonings.
- Combine Wet Ingredients: In a large bowl, whisk the melted and cooled butter with sugar until combined. Then add the yogurt, beaten eggs, mashed bananas, and vanilla extract, whisking together until smooth and well mixed.
- Fold Dry into Wet: Gently fold the flour mixture into the wet ingredients until just combined to avoid over mixing, which can toughen the bread.
- Add Strawberries: Carefully stir in the fresh diced strawberries, noting that the batter will be very thick at this stage.
- Pour and Bake: Pour the thick batter evenly into the prepared bread pan and bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted in the center comes out clean or with just a few crumbs.
- Cool: Allow the bread to cool for 10 minutes in the pan. Then remove the bread from the pan and transfer it to a wire rack to cool completely for about an hour before slicing.
- Storage: Due to the fresh strawberries, store the bread in an airtight container and consume within two to three days to maintain freshness.
Notes
- Note 1: Using ripe bananas and yogurt contributes moisture and tanginess to the bread.
- Note 3: Make sure bananas are very ripe for the best flavor and natural sweetness.
- Note 4: A 9 by 5 inch bread pan is the ideal size for this recipe to ensure even baking.
- Because of the fresh strawberries, this bread has a shorter shelf life than traditional banana bread.
