Ingredients

Scale

Dough:

  • 1/3 cup buttermilk
  • 1 large egg (slightly beaten)
  • 2 cups all-purpose flour (plus a 1/4 cup or so for working with dough)
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon fine sea salt
  • 6 tablespoons cold unsalted butter (cut into small cubes)
  • 1/2 cup chopped strawberries

Lemon Glaze:

  • 1 1/4 cup powdered sugar
  • 2 tablespoons fresh-squeezed lemon juice (or milk, if desired)

Instructions

  1. Prepare Wet Ingredients: Whisk together the buttermilk and egg in a large measuring pitcher. Set aside until ready to use.
  2. Mix Dry Ingredients: In a stand mixer fitted with a paddle attachment, combine flour, 2 tablespoons sugar, baking powder, and salt. Add butter and mix until pea-sized bits form.
  3. Incorporate Wet Ingredients: Slowly add wet ingredients to the mixer and mix until dough forms. Stir in chopped strawberries.
  4. Shape and Chill Dough: Pat or roll out dough on a floured surface, then refrigerate for 1-2 hours.
  5. Preheat and Prep: Preheat oven to 400°F and line a baking sheet.
  6. Cut and Bake: Cut dough into wedges, place on baking sheet, and bake for 15-18 minutes until golden.
  7. Make Glaze: Mix powdered sugar and lemon juice to make glaze.
  8. Glaze and Serve: Drizzle scones with glaze and allow to set before serving.

Notes

  • You can substitute milk for buttermilk if needed.
  • For a richer taste, use heavy cream instead of milk in the glaze.
  • Ensure butter is cold for flaky scones.
