Grilled Corn:

  • 2 ears of corn, grilled and kernels removed

Salad:

  • 1 large cucumber, diced

  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Grill the Corn: Preheat the grill to medium-high heat. Grill the corn for 10-12 minutes until tender and slightly charred. Remove and let cool.
  2. Prepare the Salad: Cut the kernels from the cob into a bowl. Add cucumber, red onion, and cilantro. Mix well.
