Filling and Stuffing

  • 2 medium apples
  • 2 tablespoons packed brown sugar
  • 2 tablespoons uncooked oatmeal
  • 2 tablespoons chopped walnuts
  • 2 tablespoons raisins
  • ¼ teaspoon cinnamon
  • Pinch of grated nutmeg
  • Pinch of ground cloves
  • ½ teaspoon kosher salt (or ¼ teaspoon table salt)
  • ½ tablespoon vegan margarine (optional)
  • 1 cup boiling water

Instructions

  1. Prepare the Apples: Preheat your oven to 375°F (190°C). Using an apple corer, melon baller, or paring knife, carefully remove the stem and core of each apple, ensuring the bottom remains intact to create a cavity for stuffing.
  2. Mix the Filling: In a bowl, combine the brown sugar, uncooked oatmeal, chopped walnuts, raisins, cinnamon, grated nutmeg, ground cloves, and salt. Mix well until all ingredients are evenly distributed.
  3. Stuff the Apples: Pack the filling mixture firmly into each hollowed apple, dividing it evenly. If using, place half a tablespoon of vegan margarine on top of the filling in each apple. Place the stuffed apples upright in an 8-inch by 8-inch baking dish or similar.
  4. Add Water and Cover: Pour 1 cup of boiling water into the baking dish around the apples. Loosely cover the dish with aluminum foil to retain moisture during baking.
  5. Bake the Apples: Bake covered for 20 minutes. Then, carefully remove the foil and continue baking for an additional 20 minutes until the apples are tender and the filling is cooked through.
  6. Cool and Serve: Remove the baked apples from the oven and transfer to a serving plate. Let them cool for 5 to 10 minutes before serving. Optionally, cover them again with foil to keep warm for up to 30 minutes.

Notes

  • Choose firm varieties of apples like Granny Smith or Honeycrisp for best baking results.
  • The vegan margarine is optional but adds a richer flavor and moist texture.
  • You can substitute walnuts with pecans or almonds according to preference.
  • For a gluten-free version, make sure to use gluten-free oats.
  • Leftover filling can be refrigerated and used for another day or as a topping for oatmeal or yogurt.
  • Serve with dairy or vegan vanilla ice cream for an extra special dessert.
