Peach Jam:

  • 3 lbs very ripe peaches, peeled, pitted, and roughly chopped (about 8 cups of fruit)
  • 3 TBSP fresh lemon juice
  • 1 TBSP apple cider vinegar
  • 5 cups sugar*
  • ½ tsp. Lemon zest
  • ½ tsp. Freshly grated ginger
  • 3 TBSP powdered pectin

Jalapeno Addition:

  • 3 jalapeno peppers**

Instructions

  1. Prepare the Peaches: Blanch peaches, peel, pit, and chop.
  2. Macerate: Combine peaches, sugar, lemon juice, vinegar, zest, ginger, pectin. Let sit.
  3. Prepare Jalapenos: Chop finely in food processor.
  4. Cook the Jam: Combine all ingredients in a pot, bring to a boil, and simmer.
  5. Test Consistency: Check the jam’s thickness on a chilled plate.
