Ingredients

Scale

For the Mashed Sweet Potatoes:

  • 4 large sweet potatoes
  • ½ cup granulated sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup unsalted butter, melted

For the Streusel Topping:

  • 1 cup light brown sugar, packed
  • ½ cup all-purpose flour
  • 1 cup chopped pecans
  • ½ cup unsalted butter, melted

Instructions

  1. Cook Sweet Potatoes: Prepare the sweet potatoes by baking, boiling, or steaming them until they are soft and tender. Baking is preferred for a richer flavor, usually taking about 45-60 minutes at 400°F. Once cooked, allow to cool slightly and peel off the skins.
  2. Preheat Oven and Prepare Dish: Preheat your oven to 375 degrees Fahrenheit. Lightly spray a 2-quart baking dish with nonstick cooking spray, such as coconut oil spray, and set it aside.
  3. Make Mashed Sweet Potato Mixture: In a large bowl, combine the cooked sweet potatoes, granulated sugar, kosher salt, vanilla extract, eggs, and melted butter. Using an electric mixer, beat the mixture on medium speed for 4-5 minutes until it is fluffy, smooth, and well incorporated.
  4. Bake Sweet Potato Layer: Pour the mashed sweet potato mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 25 minutes to set the base layer.
  5. Prepare Streusel Topping: While the sweet potato layer is baking, mix the light brown sugar, all-purpose flour, chopped pecans, and melted butter in a small bowl. Use a fork to combine until the mixture forms a crumbly streusel.
  6. Add Streusel and Finish Baking: Remove the baking dish from the oven and evenly sprinkle the streusel topping over the sweet potato mixture. Return to the oven and bake for an additional 10-15 minutes, or until the streusel is lightly browned and crisp.
  7. Serve: Serve the casserole immediately while warm, or cover with foil and let it sit for 30 minutes before serving if needed.

Notes

  • Sweet potatoes can be cooked by baking, boiling, or steaming based on your preference; baking develops more depth of flavor.
  • If sweet potatoes are large, peeling after baking is easier; after boiling, peel before mashing.
  • For a nuttier topping, toast the pecans lightly before adding to the streusel mixture.
  • This casserole can be prepared a day ahead; assemble fully and refrigerate, then bake just before serving.
  • Use fresh eggs and unsalted butter for the best flavor and texture.
