Sweet Potatoes

  • 56 medium sweet potatoes, peeled and cut into thin medallions

Sauce

  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the sweet potatoes.
  2. Prepare Sweet Potatoes: Peel the sweet potatoes and slice them into thin medallions. Arrange these slices evenly in a baking dish.
  3. Make the Sauce: In a small or medium saucepan, combine the unsalted butter, brown sugar, water, ground cinnamon, cloves, nutmeg, and salt. Heat over medium heat, stirring constantly until the butter is melted and the sauce is smooth and well combined.
  4. Coat and Bake: Brush about three-quarters of the sauce over the arranged sweet potatoes. Cover the dish tightly with foil and bake for 45–50 minutes until the sweet potatoes are tender.
  5. Apply Remaining Sauce: Remove the baking dish from the oven and carefully discard the foil. Brush the remaining sauce evenly over the baked sweet potatoes.
  6. Add Toppings: Sprinkle the chopped pecans or walnuts along with the mini marshmallows over the top of the sauced sweet potatoes.
  7. Broil to Toast: Return the dish to the oven and broil on high for 1–2 minutes until the marshmallows are lightly toasted and golden brown. Keep a close eye to prevent burning.
  8. Cool and Serve: Remove from oven and allow the dish to cool for 10–15 minutes before serving to let flavors meld and marshmallows set slightly.
