Chicken Mixture

  • 1 Rotisserie Chicken, shredded
  • 1 Cup Mayonnaise
  • 3 Tbs Pickled Jalapenos, diced
  • 1 Tbs Pickled Jalapeno Juice
  • 1 Cup Cheddar Cheese, shredded
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cayenne Pepper
  • Salt and Pepper to taste

Tortillas

  • 68 Medium Flour Tortillas
  • Oil or cooking spray, for toasting

Instructions

  1. Prepare the Chicken Mixture: In a large bowl, combine the shredded rotisserie chicken, mayonnaise, diced pickled jalapenos along with 1 tablespoon of jalapeno juice, shredded cheddar cheese, cumin, chili powder, cayenne pepper, salt, and pepper. Stir everything together thoroughly until well combined.
  2. Assemble the Quesadillas: Evenly distribute the chicken mixture over the bottom side of one flour tortilla. Optionally, sprinkle a little extra cheddar cheese on top of the filling for added cheesiness. Then place another tortilla on top to form a sandwich.
  3. Toast the Quesadillas: Heat a large skillet over medium-high heat and lightly coat it with oil or cooking spray. Place the assembled quesadillas in the skillet and cook until the tortillas are golden brown and crispy on both sides, about 2-3 minutes per side.
  4. Slice and Serve: Transfer the toasted quesadillas to a cutting board and slice into individual wedges. Serve warm with Taco Bell Quesadilla Sauce or a side of sour cream and salsa for dipping.
