Spaghetti Noodles:

  • 8 ounces spaghetti noodles (224g)

Ground Beef Mixture:

  • 1 pound lean ground beef (450g)
  • 1 small yellow onion, diced (187g)
  • 1 packet taco seasoning (1 ounce/28g)
  • 1 can Rotel tomatoes (10 ounces/284g)

Additional Ingredients:

  • 4 ounces shredded cheddar cheese (114g)
  • ¼ cup chopped cilantro (for garnish)

Instructions

  1. Cook Spaghetti: Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions. Reserve ½ cup of pasta water, then drain the pasta well.
  2. Prepare Ground Beef Mixture: In a large skillet over medium-high heat, cook the beef and onion until browned (about 5 minutes). Stir in taco seasoning, Rotel tomatoes, and reserved pasta water. Simmer for 5 minutes.
  3. Combine and Serve: Add cooked spaghetti and cheese to the skillet. Stir until cheese melts. Serve hot, garnished with cilantro and additional toppings like diced tomatoes, sour cream, and more cheese.
