These flavorful salmon burgers are a delicious twist on a classic favorite. Made with fresh salmon and a blend of herbs and spices, they are perfect for a summer barbecue or a quick weeknight meal.

Salmon Burger:

  • 1 1/4 pounds salmon filet, skinless and pin bones removed, cut into 1-inch pieces
  • 2 tablespoons Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 small shallot, minced
  • 1 tablespoon capers, drained
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon sea salt or Kosher salt
  • 1/4 teaspoon ground black pepper
  • Pinch of cayenne (optional)
  • 1/2 cup breadcrumbs

Herb Aioli:

  • 1/3 cup mayonnaise
  • 1 small garlic clove, grated
  • Juice of half a lemon
  • 2 tablespoons capers, drained and roughly chopped
  • 12 tablespoons chopped dill or basil
  • 1 tablespoon chopped scallions
  • Salt and pepper to taste

Additional Ingredients:

  • 4 brioche buns
  • Butter or bib lettuce leaves or arugula
  • Tomato slices
  • Red onion slices
  • Avocado slices

Instructions

  1. To Make the Salmon Burger – Add salmon, mustard, mayonnaise, shallot, capers, lemon juice, dill, salt, pepper, and cayenne to a food processor. Pulse until coarsely ground. Transfer to a bowl, add breadcrumbs, and mix. Form into patties and chill.
  2. To Make the Herb Aioli – Combine mayonnaise, garlic, lemon juice, capers, dill, and scallions. Season with salt and pepper. Refrigerate.
  3. On the Grill – Grill patties for 4 minutes per side. Toast buns. Serve.
  4. On the Stovetop – Cook patties in oil for 3-4 minutes per side. Toast buns. Serve.
  5. Air Fryer Salmon Burgers – Cook patties in air fryer at 350°F for 3-4 minutes per side. Serve on buns with aioli and toppings.

Notes

  • You can customize the toppings to suit your preferences, such as adding pickles or jalapenos.
  • For a crispy exterior, you can coat the patties in panko breadcrumbs before cooking.
