Ingredients

Scale

Main Ingredients

  • 16 ounces Velveeta cheese, cubed
  • 2 cans (10 ounces each) diced tomatoes with green chiles, drained
  • 1 pound ground beef
  • 1 packet taco seasoning
  • Water as required by taco seasoning packet

Other

  • Nonstick cooking spray

Instructions

  1. Prepare the slow cooker: Spray the inside of your slow cooker with nonstick cooking spray to prevent the dip from sticking during cooking.
  2. Cook the ground beef: Brown the ground beef over medium heat in a skillet until fully cooked and no longer pink, then drain off excess fat.
  3. Season the beef: Add the taco seasoning and the amount of water specified on the seasoning packet to the cooked beef. Cook over medium heat, stirring occasionally, until the liquid evaporates and the meat is well coated with seasoning. Remove from heat.
  4. Combine ingredients in slow cooker: Add the seasoned ground beef, cubed Velveeta cheese, and drained diced tomatoes with green chiles into the slow cooker bowl. Stir everything well to combine.
  5. Melt the cheese: Cook on low for about 1 to 1.5 hours, stirring occasionally, until the cheese is completely melted and the dip is smooth and hot.
  6. Keep warm and serve: Once melted, set the slow cooker to the warm setting to keep the queso dip hot during your party. Serve immediately with tortilla chips.

Notes

  • You can substitute ground turkey or chicken for ground beef for a lighter variation.
  • If you prefer a spicier dip, add some chopped jalapeños or cayenne pepper.
  • Stir the dip occasionally while cooking to ensure even melting.
  • Leftovers can be cooled and refrigerated for up to 3 days. Reheat gently before serving.
  • If Velveeta is unavailable, use processed American cheese for a similar creamy texture.
