Ingredients

Scale

Cookie Dough

  • 1/2 cup (111g) salted butter
  • 1/2 cup (115g) granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups (228g) all-purpose flour
  • 1 tsp baking powder

Caramel Filling

  • 20 caramels, unwrapped
  • 1 tbsp milk

Chocolate Topping

  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookie cup bases.
  2. Cream Butter and Sugar: In a mixing bowl, cream together 1/2 cup salted butter and 1/2 cup granulated sugar until the mixture is light and fluffy, forming the base of your cookie dough.
  3. Add Egg White and Vanilla: Incorporate 1 egg white and 1 tsp vanilla extract into the creamed mixture and mix until well combined, ensuring a smooth dough consistency.
  4. Add Dry Ingredients: Gradually mix in 1 1/2 cups all-purpose flour and 1 tsp baking powder until the dough comes together evenly without any lumps.
  5. Shape Dough: Roll out the dough on a flat surface to about 1/4 to 1/2 inch thickness. Use a round cookie cutter to cut out circles, then transfer the cutouts to an ungreased baking pan.
  6. Bake Cookies: Bake at 350°F for 6-8 minutes, removing them from the oven once the cookies are puffy and no longer glossy.
  7. Cool Cookies: Transfer the baked cookies to a wire rack and allow them to cool completely to set their shape.
  8. Prepare Caramel Filling: Microwave 20 unwrapped caramels with 1 tbsp milk for 1 minute, stirring halfway at 30 seconds, until the caramel is smooth and creamy.
  9. Add Caramel: Spoon a few teaspoons of melted caramel onto each cooled cookie, spreading it nearly to the edges, then place the cookies in the fridge for 10-15 minutes to chill and set the caramel layer.
  10. Melt Chocolate: Melt 2 cups of milk chocolate chips in 30-second intervals, stirring after each until fully melted and smooth.
  11. Add Chocolate Topping: Spread a thin layer of melted chocolate over each caramel-covered cookie, then allow the chocolate to cool and set before serving for a perfect Twix cookie cup experience.

Notes

  • Use salted butter to enhance the flavor balance in the cookie base.
  • Be careful not to overbake the cookies; they should be just puffy and lose glossiness for the best texture.
  • The caramel can be substituted with homemade caramel if preferred for a richer taste.
  • Milk chocolate chips can be swapped with dark or white chocolate to customize flavor.
  • Store finished cookie cups in an airtight container in the refrigerator for up to 5 days to maintain freshness.
