For the Cake:
- 3 large eggs
- 1/2 cup (100 g) sugar
- 4 oz (115 g) unsalted butter, melted
- 1 cup (240 g) plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 tablespoon (16 g) baking powder
- 1/4 teaspoon salt
- 2 cups (240 g) all-purpose flour
For the Apple Topping:
- 2 apples (I used Pink Lady) sliced 2 mm thick
- 1/4 cup water
- 1/2 cup sugar
- 1/2 teaspoon cinnamon, optional
- Preheat the oven: Preheat the oven to 350°F (175°C). Line the bottom of an 8-inch springform round pan with parchment paper and grease the sides. Set aside.
- Mix the batter: Beat eggs and sugar until fluffy. Add melted butter, yogurt, and vanilla. Sift in baking powder, salt, and flour. Mix gently and set aside.
- Prepare the apples: Arrange apple slices in a circular pattern on the bottom of the pan.
- Make the caramel: In a saucepan, cook water, sugar, and cinnamon until caramelized. Pour over the apples.
- Assemble and bake: Spread the batter over the apples and bake for 35-40 minutes. Cool, then invert onto a plate to serve.
