  • 1 cup (240 g) plain Greek yogurt

For the Apple Topping:

  • 2 apples (I used Pink Lady) sliced 2 mm thick
  • 1/4 cup water
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon, optional

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line the bottom of an 8-inch springform round pan with parchment paper and grease the sides. Set aside.
  2. Mix the batter: Beat eggs and sugar until fluffy. Add melted butter, yogurt, and vanilla. Sift in baking powder, salt, and flour. Mix gently and set aside.
  3. Prepare the apples: Arrange apple slices in a circular pattern on the bottom of the pan.
  4. Make the caramel: In a saucepan, cook water, sugar, and cinnamon until caramelized. Pour over the apples.
  5. Assemble and bake: Spread the batter over the apples and bake for 35-40 minutes. Cool, then invert onto a plate to serve.
