Dough and Base
- 16 ounces pre-made pizza dough

Filling
- 2 tablespoons vegan butter
- 2 tablespoons olive oil
- 4 tablespoons flour
- 2 sprigs fresh thyme, finely diced
- 5 sage leaves, finely diced
- salt & pepper to taste
- 1/2 yellow onion, diced
- 3 cloves garlic, diced
- 1/4 cup celery, diced
- 1 cup vegan beef broth
- 2 tablespoons tomato paste
- 2 cups cooked lentils
- 1/4 cup cranberry sauce (Trader Joe’s brand recommended)
Topping
- 2 tablespoons olive oil
- 3/4 teaspoon garlic salt
- 1 teaspoon onion flakes
- 1/2 teaspoon dried oregano
- Bring dough to room temperature: Place the pizza dough on a lightly floured surface and allow it to come to room temperature for at least 30 minutes to make it easier to roll out.
- Prepare the filling: In a pan over medium heat, melt the vegan butter with olive oil. Whisk in the flour, diced thyme, sage, and a pinch of salt and pepper until the mixture is smooth and bubbly, forming a roux.
- Sauté vegetables: Add the diced onion, garlic, and celery to the roux and cook until slightly tender, approximately 3 minutes.
