Bread:

  • 1 loaf of Little Northern Bakehouse Whole Grain Wide Slice Bread

Filling:

  • vegan cream cheese
  • 2 nori sheets
  • 1 avocado
  • 1 cucumber, peeled
  • shredded carrots
  • everything bagel spice for garnishing

Instructions

  1. Prepare Ingredients: Peel and slice the cucumber into thin strips.
  2. Smash Avocado: Spoon the avocado into a bowl and smash it with a fork.
  3. Prepare Bread: Cut the crusts off each bread slice. Microwave one slice at a time for 12-15 seconds, then flatten with a rolling pin.
  4. Assemble Rollups: Spread vegan cream cheese on the bread, add nori, smashed avocado, cucumber, and shredded carrots. Roll up from the bottom and slice or enjoy as rollups.
