Cake Batter:

  • 4 large eggs
  • 250 g condensed milk
  • 250 g Greek yogurt
  • 1/2 lemon, juice and zest

Instructions

  1. Preheat the Oven: Preheat the oven to 160C / 340F and line a 20cm springform pan with parchment paper.
  2. Prepare the Egg Yolk Mixture: In a mixing bowl, combine the egg yolks, condensed milk, lemon juice, and zest with Greek yogurt. Mix until well combined. Set aside.
  3. Whip the Egg Whites: In another bowl, beat the egg whites using an electric whisk until stiff peaks form.
  4. Combine Mixtures: Gently fold the whipped egg whites into the yolk mixture using a spatula until fully incorporated.
  5. Bake the Cake: Pour the batter into the prepared pan and place it in a larger pan filled with water. Bake for 45 minutes, then allow the cake to cool completely before refrigerating for 2-3 hours or overnight.
  6. Final Touch: Sprinkle powdered sugar on top if desired, slice, and serve.
